Mini Quiche Bites

Here is a delicious and easy recipe that was so popular at my cousin's baby shower: Mini Quiche Bites. These little bites are perfect for baby showers because they're easy to eat, can be made ahead of time, and are always a crowd-pleaser.

Here's the recipe:

Ingredients:

1 package of pre-made pie crusts
4 large eggs
1 cup half-and-half
1/2 cup shredded cheddar cheese
1/2 cup chopped cooked bacon
1/4 cup finely chopped onion
1/4 cup finely chopped red bell pepper
Salt and pepper to taste
Instructions:

Preheat your oven to 375°F

Roll out the pie crusts and use a round cookie cutter to cut out small circles that fit into a mini muffin tin. Press the circles into the muffin tin to form the crusts.

In a mixing bowl, whisk together the eggs and half-and-half. Season with salt and pepper.

Divide the chopped bacon, onion, and bell pepper evenly among the mini muffin cups.
Pour the egg mixture over the fillings, filling each cup about 3/4 full.
Sprinkle the shredded cheese on top of each quiche.

Bake for 15-20 minutes, or until the quiches are set and golden brown.

Let them cool slightly before removing from the muffin tin.

These mini quiches are always a the perfect go-to because they're bite-sized and full of flavor. You can also customize them with different fillings, like spinach and feta or ham and Swiss. They're perfect for a baby shower brunch or as a savory snack.
